    2. Mix the flour with half the black pepper and a pinch of salt; lightly dust the beef—this helps the gravy thicken.
    3. Heat the oil in a heavy pot or Dutch oven. Sear the beef in batches over high heat until well browned; transfer to a plate.
    4. In the same pot, sauté the finely chopped onion and grated carrot for 5–6 minutes until soft.
