Tender Savory Crêpe Cake with Meat, Cream Sauce, and a Golden Cheese Crust

A layered crêpe cake with juicy minced meat, a creamy sauce, and a generous cheese crust — a cozy homemade bake that comes together easily with ready-made thin crêpes. The filling stays tender, while the top turns golden and beautifully stretchy.

    Ingredients

    • Ready-made thin crêpes — 10–12 pcs.
    • Minced meat — 14–18 oz | 400–500 g
    • Yellow onion — 1–2 pcs.
    • Sweet bell pepper — 1–2 pcs.
    • Cream sauce or béchamel — 1.5–2 cups | 360–480 ml
    • Hard cheese, grated — 5.3–7 oz | 150–200 g
    • Salt and spices — to taste
    • Vegetable oil for frying — as needed

    How to make it

    1. Preheat the oven to 374°F | 190°C. Lightly grease a 8–9 in | 20–22 cm baking pan, or line it with parchment.
    2. Prepare the filling: finely dice the onion and bell pepper. Heat a little oil in a skillet, sauté the onion until soft, 2–3 minutes, then add the pepper and cook for another 2–3 minutes.
    3. Add the minced meat, break it up with a spatula, season with salt, pepper, and your favorite spices. Cook until fully done and lightly browned, 7–10 minutes. Remove from the heat.
    4. If using ready-made cream sauce or béchamel, warm it gently until just warm. For homemade béchamel, make it the classic way: butter, flour, milk, plus a pinch of nutmeg and salt.
    5. To assemble, place a crêpe in the bottom of the pan, spread a thin layer of sauce, then add some of the meat filling. Repeat the layers until the crêpes and filling are used up, ending with a crêpe on top.
    6. Spread the remaining sauce over the top and sprinkle evenly with the grated cheese.
    7. Bake for 15–20 minutes, until the crust is golden and appetizing. Let the cake rest for 5–10 minutes, then slice and serve.

    Tips and variations

    • Sauce: béchamel gives the softest result. For a quicker version, use 20% cream and warm it with a pinch of salt and nutmeg.
    • Cheese: Gouda, Maasdam, Russian-style cheese, and mozzarella all work well; add a little Parmesan for a more pronounced flavor.
    • Meat: use beef, pork, or a mix. With ground chicken, the cake will be lighter.
    • Juiciness: do not overcook the filling in the pan — remove it as soon as the meat is no longer pink.
    • Serving: delicious with herbs and a light salad; add sour cream or a mild garlic sauce if desired.

    FAQ

Can béchamel be replaced with regular cream?

Yes. Use 20–30% cream, warmed with a pinch of salt, pepper, and nutmeg. The texture will be lighter, but the cake will still stay moist.

    What baking pan is best?

A round 8–9 in | 20–22 cm pan is ideal for standard 8–9 in | 20–22 cm crêpes. The sides should be at least 2 in | 5 cm high so the layers hold their shape.

Can I make the cake ahead of time?

Yes. Assemble the cake, cover it, and refrigerate for up to 12 hours. Before baking, let it sit at room temperature for 15 minutes, then bake as usual.
