Turkey Drumsticks in Honey-Soy Marinade, Melt-in-Your-Mouth

Exceptionally tender turkey drumsticks with caramel notes of honey and the savory depth of soy sauce. Slow roasting in a bag seals in the juices, leaving the meat soft and literally melt-in-your-mouth delicate.

    Ingredients

    • Turkey drumsticks — 4 pcs.
    • Soy sauce — 3 tbsp | 45 ml
    • Honey — 1 tbsp | 15 ml
    • Lemon juice — 2 tbsp | 30 ml
    • Wholegrain mustard — 1 tsp | 5 ml
    • Garlic — 3 cloves
    • Olive oil — 1 tbsp | 15 ml
    • Salt, black pepper — to taste

    Step-by-step recipe

    1. Whisk together the soy sauce, honey, lemon juice, wholegrain mustard, minced garlic and olive oil until smooth.
    2. Pat the drumsticks dry with paper towels and make 2–3 shallow cuts in each. Season with salt and pepper, then coat thoroughly with the marinade.
    3. Cover and refrigerate for at least 2 hours, turning occasionally; the longer they marinate, the deeper the flavour.
    4. Transfer the drumsticks and all the marinade to a roasting bag, tie the ends tightly and make 2–3 small pinholes on top to let steam escape.
    5. Bake at 320°F | 160°C for about 2 hours, until the meat is very tender.
    6. If you like a more golden finish, carefully cut open the bag during the last 10 minutes of cooking. Rest the meat for 5–10 minutes before serving.

    Tips and variations

    • Without a roasting bag: bake in a dish covered with foil, then remove the foil and brown for 10–15 minutes at the end.
    • Sweetness: honey can be replaced with maple syrup or brown sugar.
    • Soy sauce: use a light soy sauce; if yours is very salty, reduce the added salt.
    • Spices: add paprika, rosemary or thyme for a more aromatic finish.
    • Chicken drumsticks: follow the same method, but bake for 60–75 minutes at 356°F | 180°C.

    Frequently asked questions

Can I make it without a roasting bag?

Yes. Bake in an ovenproof dish covered with foil to keep the meat juicy, then remove the foil and brown at the end.

What can I use instead of wholegrain mustard?

Dijon mustard or regular yellow mustard will work well. Adjust the amount to taste depending on how sharp it is.

What is the minimum marinating time for turkey?

At least 2 hours. If you have time, leave it for 6–8 hours or overnight for a deeper flavour and even more tender meat.
