The perfect hearty family dinner: tender chicken breast wrapped in bacon and baked on one sheet pan with fragrant potatoes. Everything is finished with a spiced garlic-butter glaze and served with quick-pickled red onion — simple, striking, and deeply satisfying.

    Ingredients

    • Chicken breast — 1.3 lb | 600 g
    • Bacon, thin strips — 5.3 oz | 150 g
    • Potatoes — 1.3 lb | 600 g
    • Olive oil — 3 tbsp | 45 ml
    • Sweet paprika — 1 tsp | 5 ml
    • Garlic powder — 2 tsp | 10 ml
    • Salt — 1 tsp | 5 ml
    • Ground black pepper — 1/2 tsp | 2.5 ml
    • Red onion — 1
    • Lemon juice — 1 tbsp | 15 ml
    • Sugar — 1/2 tsp | 2.5 ml
    • Fresh parsley, chopped — 3 tbsp | 45 ml
    • Butter, melted — 0.9 oz | 25 g
    • Fresh garlic — 2 cloves
    • Wooden skewers — 8–10

    Step-by-Step Recipe

    1. Prepare the potatoes: peel and cut into large wedges (leave small potatoes whole). Parboil in salted water until just tender, 8–10 minutes. Drain well.
    2. Preheat the oven to 400°F | 200°C. Place the warm potatoes in a baking dish, drizzle with 2 tbsp | 30 ml olive oil, sprinkle with 1 tsp | 5 ml garlic powder, 1/2 tsp | 2.5 ml salt, and 1/4 tsp | 1.25 ml pepper, then toss gently.
    3. Cut the chicken breast into long strips about 3/4 inch | 2 cm thick. Toss with the remaining olive oil (1 tbsp | 15 ml), paprika, the remaining salt, pepper, and garlic powder. Let stand for 10–15 minutes.
    4. Wrap each strip of chicken with a strip of bacon and thread onto skewers. Arrange the skewers over the potatoes or beside them in the dish.
    5. Bake on the middle rack for 18 minutes at 400°F | 200°C, until the chicken is juicy and the bacon is nicely browned.
    6. While the dish is in the oven, thinly slice the red onion and marinate it with lemon juice, 1 tbsp | 15 ml parsley, sugar, and a pinch of salt for 10 minutes. Melt the butter, mix with the chopped garlic and remaining parsley. Brush the finished skewers and potatoes with this mixture and serve with the pickled onion.

    Tips and Variations

    • Soak the skewers in cold water for 10–15 minutes first so they do not burn in the oven.
    • If using convection, bake at 375°F | 190°C and start checking for doneness at the 15-minute mark.
    • Turkey breast or pork tenderloin works well instead of chicken breast; baking time may increase by 3–5 minutes.
    • Try smoked paprika, or add a pinch of dried rosemary to the potatoes for a deeper aroma.
    • Potatoes can be replaced with a mix of vegetables: zucchini, carrots, bell peppers — cut into large pieces.

    FAQ

Can I make it without skewers?

Yes. Form small chicken-and-bacon rolls and place them over the potatoes. The baking time will stay about the same.

What can I use instead of bacon?

Pork belly or prosciutto work well. Or skip the bacon and brush the chicken with the garlic-butter mixture, adding a pinch of smoked paprika for aroma.

How should I store and reheat leftovers?

Store in the refrigerator for up to 3 days in an airtight container. Reheat in the oven at 350°F | 180°C for 8–10 minutes, or in the microwave in short bursts.
