Tomato Salad with Burrata, Basil and Crisp Baguette

Tender burrata, sweet ripe tomatoes, fresh basil and a splash of balsamic vinegar come together in a summer salad with bright flavor and a silky texture. Serve with slices of fresh baguette to soak up the fragrant tomato juices and creamy center of the cheese.

    Ingredients

    • Ripe tomatoes — 1.1 lb | 500 g
    • Burrata — 8.8 oz | 250 g
    • Olive oil — 2 tbsp | 30 ml
    • Balsamic vinegar — 1 tbsp | 15 ml
    • Fresh basil — 0.4 oz | 10 g
    • Red onion — 1/2 piece
    • Salt — 1/2 tsp | 3 g
    • Sugar — 1/2 tsp | 2 g
    • Fresh baguette — 1 loaf

    How to Make It

    1. Cut the tomatoes into wedges or thick rounds. Slice the red onion into thin half-moons.
    2. Place the tomatoes and onion in a bowl, season with salt and sugar, drizzle with the balsamic vinegar and 1 tbsp | 15 ml of olive oil. Toss gently and let stand for 10 minutes so the tomatoes release their juices and the flavor deepens.
    3. Arrange the tomatoes and onion on a serving platter, spooning over any juices.
    4. Gently tear the burrata into large pieces with your hands and scatter over the tomatoes.
    5. Drizzle with the remaining 1 tbsp | 15 ml of olive oil and add the basil leaves.
    6. Slice the baguette and serve alongside. If desired, lightly toast the slices in a dry skillet.

    Tips and Variations

    • Choose the ripest, most fragrant tomatoes you can find: heirloom, plum, cherry, or a colorful mix.
    • If the tomatoes are not very sweet, increase the sugar to 1 tsp | 4 g or add just a pinch more to lift the flavor without turning the salad dessert-like.
    • For a deeper, more luxurious finish, swap the balsamic vinegar for balsamic glaze, but reduce the amount to 1–2 tsp | 5–10 ml.
    • Serve immediately after assembling — burrata and tomatoes are at their best at room temperature.

    FAQ

Can I replace burrata with mozzarella?

Yes, a good-quality mozzarella ball will work. The salad will be less creamy, so add a little more olive oil.

What can I use instead of balsamic vinegar?

Try red wine vinegar with a pinch of sugar, or fresh lemon juice with a drop of honey. Add to taste to keep the balance of acidity and sweetness.

    How do I store leftovers?

It is best eaten right away. If you have leftovers, keep the burrata separate from the tomatoes and the baguette on the side. In the fridge, the salad without baguette will keep for up to 1 day, but the tomatoes will release more juice and soften.
