Crispy Croissant with Ham, Cheese, and Scrambled Eggs

An ideal breakfast in just minutes: a golden croissant with melted cheese and thin slices of ham, finished with tender scrambled eggs, fresh arugula, and creamy avocado. In the oven, the croissant stays crisp on the outside while the filling turns gooey and deeply aromatic.

    Ingredients

    • Large croissant — 1 pc.
    • Ham — 1.4 oz | 40 g
    • Semi-hard cheese (Gouda, Emmental, or Cheddar) — 1.4 oz | 40 g
    • Eggs — 2 pcs.
    • Milk — 1 tbsp | 15 ml
    • Unsalted butter — 0.2 oz | 5 g
    • Arugula — 1 handful
    • Avocado — 1/4 pc.
    • Salt and black pepper — to taste

    Step-by-Step Recipe

    1. Preheat the oven to 375°F | 190°C. Slice the croissant lengthwise, stopping short of cutting all the way through so it opens like a book.
    2. Layer the ham and cheese inside. Transfer the croissant to a baking sheet and bake for 5–7 minutes, until the cheese has melted and the crust is lightly crisp.
    3. While the croissant is baking, whisk the eggs with the milk, a pinch of salt, and pepper until smooth.
    4. Melt the butter in a skillet over medium-low heat. Pour in the egg mixture and cook, stirring gently, until creamy, 1.5–2 minutes. Remove from the heat before it dries out.
    5. Slice the avocado thinly. Rinse and dry the arugula.
    6. Remove the croissant from the oven. Fill it with the scrambled eggs, then top with arugula and avocado. Add a little more pepper if you like.
    7. Serve immediately while the croissant is still crisp and the cheese is stretchy.

    Tips and Variations

    • Cheese: choose well-melting varieties such as Gouda, Emmental, Tilsit, young Cheddar, or mozzarella.
    • Without an oven: warm the filled croissant in a dry skillet with a lid for 3–4 minutes over medium heat.
    • Add-ins: Dijon mustard, a thin slice of tomato, or a pickled gherkin add freshness and a lively bite.
    • Lighter: swap the ham for turkey, reduce the cheese to 0.9–1.1 oz | 25–30 g, and use a smaller croissant.
